could i use one 1/4 jack output for two apc circuits? like say i just wired the two outputs together and then the grounds together and soldered them to a single output. would this cause unwanted distortion?

"unwanted"... distortion? I'm not familiar with the concept. The more distortion the merrier!
If you want to combine two Atari Punk Console outputs into a single jack, you'll probably want some sort of simple mixer. Circuits for these abound on the Internet.
