Convert something non-MIDI to MIDI?

I always wondered how people did this. I have seen it done to a speak and read and a casio keyboard and a pikachu(lol)

Is there some sort of midi diagram/datasheet i can use to convert these things?

Theres a few schematics out there for midi to trigger or midi to switch convesion, probably using a PIC of some sort. Otherwise Dylan is right, Highly Liquid is the way to go.
