They are like this:

   0. 0 0
0            0      (0 = solder point)
   0    0.

On the surface they are little metal boxes with a screw on top like a trim preset pot.
Screwing it makes the pitch go up down/up.
If I connect the solder points with a dot next to each other, it does an insane pitch bend, though you cannot use more resistance for less pitch..

How do I wire these bitches up? Or is it not a potentiometer?

As far as i'm aware, the thing you're describing is a coil. They function kinda like a crystal resonator does, meaning that you can't just replace it with a pot. You've gotta replace it with an oscillator if you wanna pitch bend.
