Okay, so lately I've been wanting to experiment with foot controls to trigger sounds in circuit bent instruments. I was thinking if I had something like one of those noise making key chains if I could just solder wires from the traces to a 1/4" jack and then run a guitar cable to a box with a foot switch on it. would that work? Or would soldering the traces to a jack just create a permanent signal?

Depends how the jack is wired.  If the sounds are triggered by closing a switch then a normally-open footswitch should do the job.

Some synths have normally-closed footswitches, some have normally-open.  Most aftermarket switches have a little slide switch to choose which way round they work  - ie. break for sustain, or close for sustain.
If at first you don't succeed, stick it through a fuzzbox.
